Vitamin B6 and Rheumatoid Arthritis Seminar
NFSC 642: Topics in Vitamins and Minerals
Skill Area: Nutrition Research
Assignment Title: Vitamins and Disease Seminar
Assignment Description: This assignment was meant to have students investigate the use or lack of a micronutrient on specific disease states or conditions.
What I learned: I learned so much about specific interactions between vitamin B6 and rheumatoid arthritis. I also learned how to understand and propose mechanisms of action of vitamins with diseases. I really appreciated learning this process of looking at the literature and working through mechanisms and thinking critically about interactions between nutrients.
Relevance to the profession: This assignment is relevant to the profession because dietitians need to keep up on research of the effect of micronutrients on disease states, especially in clinical settings. Dietitians will have to recommend supplements and these recommendations need to be based on strong evidence and the ability to understand the interactions on nutrients in patients.
